


I made this recipe the first time I did Whole 30. I love avocado toast and didn’t want to give it up, even though I was giving up grains! So avocado “toast” with a tomato was born. The best part about this dish is the combination of textures. While you could top this “toast” with an egg cooked any style, the gooey warmth of a poached egg works perfectly to compliment the cool juiciness of the tomato and the warm fattiness of the avocado. The difference in textures and temperatures in this dish make it truly satisfying. I really wanted to share this recipe because I now prefer this version of avocado “toast” to a grain-full version and I want other to experience it as well! And the best part is, it’s incredibly easy to make!
Recipe
1/4 an avocado
1 large heirloom tomato
1 egg
Salt to taste
Pepper
- Simmer water and add egg for poaching. Let egg sit in simmering water for about 4 minutes then remove with a slotted spoon and pat dry.
- Add 1/4 an avocado to a bowl and smash with a fork. While smashing add salt to taste.
- Cut large heirloom tomato into thick round slices
- Top heirloom tomato round with avocado mash, add poached egg, and grind a bit of pepper on top
