Gluten Free High Protein BBQ Chicken Pizza

Pizza is one of the most ordered foods on valentine’s day, being on a weight loss journey doesn’t mean missing out on that! This whole pizza is under 850 calories with 75 grams of protein! Using greek yogurt in the dough helps to add protein and makes this pizza so easy to make at home – it may even be the perfect date night activity.

I make this pizza gluten free and lactose free by using gluten free dough and lactose free cheese. I can feel good after eating this and still enjoy the experience of pizza. I ate made this pizza all the time during my weight loss journey.

I hope you try it out and see just how easy and delicious it is for yourself. I’ve also sometimes doubled the dough recipe and kept half in the freezer to make weeknights even easier.

ingredients:

1/2 cup gluten free flour 

1/2 cup non fat greek yogurt 

1 tsp baking powder

1/2 tsp salt

Chicken breast 1/3 cup, chopped

No Sugar Added BBQ Sauce – 3 tbsp

Lactose Free Mozzarella ⅔ cup

Onion red, chopped- 1 tosp

Green bell peppers chopped – 2 tbsp

Crimini mushrooms sliced – 2 cup

Spray oil 

Cilantro for garnish 

Instructions:

Step 1: Make the Dough

Preheat your oven to 400°F (200°C).

In a medium mixing bowl, combine gluten-free flour, Greek yogurt, baking powder, and salt. Mix until a dough forms.

Lightly flour a surface and knead the dough for
1-2 minutes until smooth. If sticky, add a little more flour.

Step 2: Par-Bake the Crust

Place the dough on a parchment-lined baking sheet or pizza stone. Use your hands or a rolling pin to shape it into a thin, even circle or rectangle.

Lightly spray the surface with oil and bake for
8-10 minutes, until it starts to firm up and turn slightly golden.

Step 3: Sauté the Mushrooms

While the crust is par-baking, heat a pan over medium heat and spray with oil.

Add the sliced crimini mushrooms and sauté for 4-5 minutes, until softened and slightly browned. Remove from heat and set aside.

Step 4: Assemble the Pizza

Remove the par-baked crust from the oven and spread the BBQ sauce evenly over the top.

Sprinkle half of the cheese, then evenly distribute chicken, sautéed mushrooms, red onion, and bell peppers.

Top with the remaining mozzarella cheese.

Step 5: Final Bake

Return the pizza to the oven and bake for
10-12 more minutes, or until the cheese is melted and bubbly and the crust is golden brown.

Remove from the oven, garnish with fresh cilantro and a drizzle of bbq sauce if desired, let it cool slightly before slicing.
