
This recipe was one of my go to’s during my 60 lb weight loss journey. It’s surprisingly easy, high protein, high fiber, and is so satisfying!
Recipe:
• 1 large sweet potato
• 1 tsp olive oil
• 1 small onion, chopped (about ¾ cup)
• 2 cloves garlic, minced (about 1 tbsp)
• 1 chopped green bell pepper
• ¼ cup cilantro chopped
• 1 large jalapeño pepper chopped
• 2 tbsp tomato paste
• 1 can canned black beans, rinsed and drained
• 1 lb taco-seasoned ground turkey
• ¼ cup chicken bone broth
1. Puncture a large sweet potato with a fork. Spray with oil and cook in the air fryer at 400 for 20-25 mins
- Heat oil: In a large skillet, heat 1 tsp of olive oil over medium heat.
2. Sauté aromatics: Add the chopped onion. Cook for 2–3 minutes until fragrant and the onion becomes translucent.
3. Add vegetables: Stir in the green bell pepper and jalapeño and galric and cilantro. Cook for another 3–4 minutes until slightly softened.
4. Add tomato paste: add
tomato paste and taco seasoning if your
meat isn’t preseasoned. cook for 1
minute.
- Cook the meat: Brown the meat, breaking it up with a spatula, for about 5–7 minutes until fully cooked.
6. Add beans and broth: Stir in the drained black beans and chicken bone broth. Simmer for 5–7 minutes, allowing flavors to combine and the mixture to thicken slightly.
7. Serve: Spoon the mixture into half of the baked sweet potato and top with greek yogurt and avocado.
