Maple Blueberry Egg White Oats

This cozy bowl is packed with fiber, plant-based protein, and warm blueberry-maple flavor. It’s gluten-free, high in protein and fiber, and the perfect way to start your morning feeling full and energized!

🥣 Ingredients

For the oats:

1 cup water 1 oz gluten-free oats (about ¼ cup) ¼ tsp salt ¼ cup frozen blueberries 1 heaping tbsp vegan protein powder (I use Ambrosia Collective Cinnamon Roll) 2 tsp chia seeds 2 tsp ground flaxseed ½ tsp cinnamon ¼ tsp nutmeg Dash of ground ginger 1 tbsp monkfruit maple syrup Splash of high-protein milk (dairy or plant-based)

Toppings:

2 tsp peanut flour + dash of salt + pinch of stevia (mixed with water to make a drizzle) Handful of fresh or frozen blueberries

👩‍🍳 Directions

In a small pot, bring 1 cup of water to a simmer. Stir in oats, salt, and frozen blueberries. Let cook over low heat for 2–3 minutes. Add chia seeds, flaxseed, cinnamon, nutmeg, and ginger. Stir well. Once the mixture begins to thicken, stir in your protein powder and a splash of high-protein milk. Adjust consistency to your liking. Simmer until thick and creamy, about 5–7 minutes total. Pour into a bowl and top with the peanut flour drizzle and extra blueberries.
